About Chef Davis

Originally from Florida, Davis has had successive stints at Fox Restaurant Concepts, The Westin La Paloma Resort & Spa, Primo at J.W. Marriott Starr Pass Resort & Spa and Beyond Bread. He is a self-taught pastry chef whose skills were noted in August by the Chef's Association of Southern Arizona. The group named him Pastry Chef of the Year at the competition.

Davis, 37, recently answered questions posed by Taste Plus.

Question: What's your favorite restaurant in the Tucson area and why?

Answer: Jonathan's Tucson Cork. He has game food - ostrich, duck, lots of things you don't normally see on restaurant menus.

What's your favorite dish to prepare and why?

My chocolate crème brûlée flourless torte. It has so many different flavors, it's so light, so creamy. You don't even have to chew. You just put it in your mouth, and it melts.

What's your favorite dish to eat?

I eat just about anything. But for dessert, anything that deals with chocolate. Other than that, pizza. I love pizza.

What's unique about the Tucson restaurant scene compared to other cities?

There's more individual, mom and pop places. It's not as corporate as other cities.

What's your favorite or most-used kitchen utensil or gadget?

My small offset spatula. I use it for just about everything - cutting, spreading, decorating, carrying desserts.

What do you always have in your refrigerator?

Propel ((Fitness) Water. I love that stuff. My favorite is the peach flavored. It's like biting into a peach.

Why are you a chef?

I'm artistic. I love drawing. I love to create. With pastries, you can do both. It feeds my creativity.
